Even high-quality matcha can lose its magical taste if a few very common mistakes are made. If your drink sometimes tastes flat, bitter, or grainy, the issue may not be the quality of the matcha, but the preparation process.
Here are 6 common beginner mistakes and simple ways to fix them.
1. Saving matcha for a “special occasion”
It’s tempting to save your favorite matcha for a “better day,” but the reality is simple—once opened, matcha begins to oxidize. Exposure to air, light, and heat causes its vibrant green color to fade and its flavor to become dull and bitter. Enjoy your matcha at its best and use it within 1–2 months after opening. Store it in a cool, dark place—ideally in the refrigerator.
2. Using a dry bamboo whisk (chasen) = shorter lifespan
A bamboo whisk, or chasen, is a delicate tool. When used dry, the bristles are stiff and more likely to break. Before each use, soak the whisk in hot water for 1–2 minutes. This softens the bristles and helps maintain its shape over time.
3. Unsifted matcha and unpleasant clumps
If matcha powder isn’t sifted, clumps often form at the bottom of the bowl, creating a grainy mouthfeel and ruining the overall experience. Sifting matcha before adding water results in a smooth, silky drink.
4. An electric frother is convenient—but not always ideal
An electric frother isn’t a mistake in itself, but it often creates large bubbles rather than the fine foam matcha is known for. For a classic result, use a chasen, which produces delicate microfoam that gives matcha a creamier texture and a more pleasant mouthfeel.
