Recipe: Festive Matcha Gingerbread Cookies

These Matcha Gingerbread Cookies bring a unique blend of warm spices and earthy matcha flavor, perfect for the holiday season or any time you want to bake something special. This recipe allows you to whip them up quickly in your Air Fryer or take your time with the traditional oven method. 

Ingredients: 

  • 100g butter
  • 100g brown sugar
  • 40-60g NOT GREEN Matcha (depending on how strong you want the matcha flavor)
  • 4 tablespoons honey
  • 1 teaspoon vanilla extract 
  • 225g wheat flour 
  • 1 teaspoon baking powder
  • 1-2 teaspoons gingerbread spice mix

Instructions: 

Step 1: Melt the butter

In a small saucepan over low heat, melt the butter, brown sugar, honey, and vanilla extract. Stir constantly until everything is fully dissolved and the mixture is smooth. Remove from heat and let it cool for 5–10 minutes.

Step 2: Mix the dry ingredients

While the butter mixture cools, combine the flour, baking powder, matcha, and gingerbread spice mix in a large bowl. Whisk or stir to evenly distribute the ingredients. 

Step 3: Combine to form the dough 

Slowly pour the cooled butter mixture into the bowl of dry ingredients. Stir until a smooth dough forms. If the dough feels too soft, wrap it in cling film and refrigerate for 20–30 minutes to firm up. 

Step 4: Roll and shape

Sprinkle a little flour on your work surface and roll out that green dough to about 5mm thick. Time to unleash your creativity! Use your favorite cookie cutters to make festive shapes. 

Step 5: Bake in the Air Fryer or oven

Air Fryer method: Preheat your air fryer to 180°C (350°F). Place the cookies on parchment paper in the air fryer basket, leaving a bit of space between them. Bake in small batches for 5–7 minutes, or until the edges are golden brown. 

Oven method: Preheat your oven to 180°C (350°F). Bake the cookies on a parchment-lined baking tray for the same amount of time. 

Step 6: Cool the cookies 

Once they’re baked to perfection, transfer these beauties to a cooling rack. They might seem soft at first, but don't worry! They’ll harden up just right as they cool down. 

Step 7: Decorate (optional, but fun) 

Once they’ve cooled completely, unleash your inner artist! Decorate with icing, sugar sprinkles, or keep them simple and rustic. Just know that these cookies are stunning even without the bells and whistles! 

 

Tips for the Perfect Matcha Gingerbread Cookies: 

Matcha Amount: If you’re new to matcha, start with 40g for a milder flavor. If you’re a matcha lover, go up to 60g for a more pronounced taste. 

Chill The Dough: If the dough feels sticky, don’t skip the refrigeration step—it makes rolling and cutting so much easier. 

Even Rolling: Use a rolling pin with thickness rings to ensure your cookies bake evenly.
