These Macokie’s (Matcha cookies) are easy to make, absolutely delicious, and perfect for anyone who enjoys matcha’s vibrant flavor in a sweet treat. You can make them in your air fryer or oven.
Why Air Fryer Cookies?
If you haven’t tried baking cookies in an air fryer yet, you’re missing out. Air fryer baking is faster and requires less heat, making it an ideal option when you're craving something sweet but don’t want to spend much time. The result is crispy on the outside, soft on the inside – exactly how cookies should be! But don’t worry, you can easily make these in a conventional oven too.
Ingredients:
- 200g butter (melted and cooled)
- 200g sugar
- 2 eggs
- 280g wheat flour
- 40g NOT GREEN Matcha
- 140g dark chocolate chunks
Instructions:
Step 1: Mix the butter and sugar
Start by melting the butter and allowing it to cool slightly. Then, in a large bowl, mix the melted butter with the sugar until smooth and creamy.
Step 2: Add the eggs
Beat in the eggs, one at a time, ensuring each is fully incorporated into the mixture before adding the next and mix.
Step 3: Combine the dry ingredients
Add the flour, baking powder, and NOT GREEN Matcha.
Step 4: Mix the dough
Mix everything together. Once combined, fold in the dark chocolate chunks and stir them into the dough with a spoon. The dough should be soft but not too sticky.
Step 5: Prepare for baking
Line your Air Fryer basket or a baking tray (if using an oven) with parchment paper. Scoop the dough and place them onto the parchment paper with some space between each cookie, as they will spread out while baking.
Step 6: Air Fryer or oven method
Preheat your Air Fryer to 180°C (350°F). Place the cookies into the Air Fryer basket and bake for about 8-11 minutes, or until the edges are golden brown. Keep an eye on them after 8 minutes to make sure they don’t overbake. Once done, carefully remove them from the Air Fryer and let them cool for a few minutes.
Oven: Preheat the oven to 180°C (350°F). Bake the cookies for about 8-11 minutes, just like the Air Fryer method, or until the edges turn golden brown.
Step 7: Cool and enjoy
Let the cookies cool for a few minutes before enjoying the soft, chewy center and the crispy edges. We added a glaze for extra flavor and appearance. You can also enjoy them warm with a cup of your favorite tea or coffee!
