Easy to make and even easier to enjoy, they’re ideal as a midday snack or a post-workout boost! 

Ingredients: 

  • ½ cup soft pitted dates
  • ½ cup raw almonds 
  • ¼ cup cocoa powder
  • 40 grams NOT GREEN Matcha 
  • Pinch of sea salt
  • 1 tablespoon unsweetened almond milk 

Instructions: 

Step 1: Blend the ingredients

Combine the dates, almonds, cocoa powder, matcha powder, sea salt, and almond milk in a food processor. Blend until the mixture becomes sticky and forms a dough-like consistency. 

Step 2: Shape the balls

Scoop out about a tablespoon of the mixture at a time and roll it into small balls using your hands. 

Step 3: Optional coating

Roll the balls in shredded coconut, hemp seeds, or a dusting of extra matcha powder if you’d like to enhance the flavor and texture. 

Step 4: Chill and serve 

Place the Matcha Energy Balls in the fridge for at least 20–30 minutes to firm up. Serve chilled and enjoy!

 

Tips for the Perfect Matcha Energy Balls: 

Use Soft Dates: If your dates feel dry, soak them in warm water for 10 minutes and drain before blending. This ensures a smooth, sticky texture.

Don’t overblend: Pulse the ingredients just until combined to maintain some texture from the nuts. 

Chill the Mixture: If the dough feels too sticky to roll, pop it in the fridge for 10-15 minutes to firm up.
